Chipotle Cheddar Cheese Waffles

Dry ingredients:
2 cups Bearpaw Savory Pancake Mix
6 oz. grated coarsely sharp Cheddar Cheese
Wet ingredients
1-3/4 cup buttermilk
2 large eggs; 1 tablespoon seeded and minced canned chipotle in adobo sauce
6 tablespoons melted and cooled butter
4 scallions, thinly sliced.
Ready to get started?
  1. Mix wet ingredients into dry with spatula until evenly moist. The batter will be thick.
  2. Ladle onto waffle iron.


Chef’s notes:
  1. A great waffle to top with an egg and served with chorizo sausage!
