Healthy Gingerbread Cake

2-1/2 cups Bearpaw Heritage Pancake Mix
1 cup coconut sugar or dark brown sugar
1 tsp instant espresso powder
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp cayenne
1/8 tsp ground coriander seeds
1/8 tsp ground cloves
1/4 tsp salt
1 cup molasses
8 oz plain yogurt
1/2 cup applesauce
1/3 cup oil
2 tablespoon crystallized ginger, minced
1 tablespoon balsamic vinegar
1-1/2 tsp grated lemon zest
1 tsp grated fresh ginger
Ready to get started?
  1. Heat oven to 325 degrees.
  2. Line bottom of 9 inch square baking pan with parchment paper, and spray with cooking spray.
  3. Combine dry ingredients in a medium-sized bowl and mix.
  4. In another medium-sized bowl, mix together remaining ingredients.
  5. Add both mixtures together, and stir.
  6. Pour batter into prepared pan and bake for 60 to 70 minutes, or until toothpick comes clean at the center of the bread.
